Originating in the Fertile Crescent of the Middle East and cultivated for more than 10,000 years, wheat and its thousands of varieties have had sweeping effects on agriculture, diets and economies throughout the world. Learn more about its fascinating history from Vicki Medland, former Co-director of the Cofrin Center for Biodiversity at University of Wisconsin-Green Bay, coordinator of the annual UWGB heirloom plant sale, and food systems educator.
